The chef invites you to a restaurant where we cook according to the idea of Slow Food. We focus on natural products, cooperation with small, regional suppliers and an artisanal approach to creating dishes. Good produce and passion - find out what this combination tastes like in the Akademia restaurant.
In our kitchen, we make everything we can ourselves. We bake our own bread and rolls, make jams from local produce, make our own pates and even have our own ice cream! We source organic flour from a nearby mill and pickles are supplied by a friendly farm. We have our own smokehouse and breadhouse with a wood-fired oven. We grow herbs and vegetables. We pay great attention to the quality of our dishes, because we want to feed you healthily and deliciously. Our mission is to create traditional, Polish dishes but with a modern twist. This allows you to rediscover flavours you seem to already know.
We use modern cooking techniques such as sous vide, which involves subjecting vacuum-sealed meat to a water bath for hours. This makes it extremely tender, juicy and crisp. We smoke it using a device called a Green Egg. We achieve interesting visual effects using liquid nitrogen. And we serve everything beautifully in unconventional dishes, so a visit to our restaurant is also a feast for the eye.
