Fish farming in the Milicz ponds has a long history. The first ponds were built by monks as early as the Middle Ages, as carp prepared in various ways was a favourite dish during the numerous fasts. As the centuries passed, farming methods were improved, and over time a well-organised fishery developed in the area, and to this day the Milicz Ponds are Europe's largest complex of breeding ponds.

The ponds could have been created thanks to the favourable geographical conditions - the Barycz River with its slight gradient and the flat terrain makes the water in this area flow very slowly, and such conditions are favourable for the construction of water reservoirs. Very often, ponds were created in depressions after the mining of bog iron ore.

The 17th and 18th centuries were the golden age of fish farming in the area. In the 18th century, the total area of breeding ponds amounted to more than thirteen thousand hectares, about twice as much as today.

In the nineteenth century, some of the ponds were decommissioned and turned into farmland, new methods of carp farming were introduced, as well as hydro-technical facilities that allowed more efficient use of water.

In the 1960s, in the 20th century, the ponds underwent a phase of restoration, earth islands were laid, which today are an important breeding ground for birds. Shortly afterwards, the "Stawy Milickie" Nature Reserve was established on a large part of the ponds to protect the birds and animals living on the ponds. Carp and other fish are now farmed extensively, using only natural means.

Today, 'Karp milicki' is a traditional regional product listed by the Ministry of Agriculture and Rural Development.

It is still bred in a three-year cycle and fed with grain. Its meat is tender and, although it contains a lot of fat, it is very easily digestible along with protein. It contains many mineral salts and vitamins. Carp is one of the fish whose consumption is recommended by doctors as a preventive measure to reduce the risk of coronary heart disease.
